Crab Cake Benedict

IMG_1625This was SO GOOD so easy to make! The hardest part for me was poaching the egg, but it turned out to be easier that I expected. The only change I made was instead of a bed of arugula under the crab cake, I used spinach. Because I love spinach. This was the first one I did, so I found the instructions to be super straight-forward and easy to follow. The time estimate was right on, and I felt super fancy for my Sunday Brunch at home. All I needed was a mimosa 😉

Caesar Salad

The other day I made a caesar salad dressing and croutons entirely from scratch when I had a craving for a lighter meal. The dressing was a little intimidating at first because you have to make sure the oil emulsifies correctly so the dressing has the correct consistency. Homemade croutons are the best because you can flavor them with your favorite herbs and spices to your liking. 

Chocolate Lava Cake with Creme Anglaise and Whipped Creme

I have a major sweet tooth, an addiction to sweet and savory dishes. Making this dish made me feel like a bonafide chef. I’m not normally a big fan of chocolate but this lava cake was addicting. With the vanilla creme anglaise sauce and the homemade fresh whipped cream it tasted like a warm hot chocolate on a cold winter’s night. I’m definitely more of a baker than I am a chef, plus it’s so much more fun to make a dessert plate look prettier than a dinner plate. 

Eggs en Cocotte

Anyone who knows me knows that I love love love breakfast food, especially eggs and bacon dishes. While the name may be super intimidating, Eggs in Cocotte is actually a super simple dish to make and dress up a meal. The combination of a poached egg, melted cheese, and bacon in individual portions make for a great breakfast experience. 

Braised Short Rib with Rice Pilaf and Braised Rainbow Carrots

I always though my grandpas BBQ beer ribs were my absolute favorite dish, however, this fancier take on a rib dish offers up some new completion. Soaked and slow cooked in a mixture of wine and stock this meat is so tender and juicy and the vegetable offer up a delicious side. I usually only eat rice when it’s rolled around some sushi but this rice pilaf was more delicious than I could have imagined. A perfect and easy meal to impress your boo on a date night. 

Grilled Steak au Poivre with Roasted Red Potatoes and Grilled Vegatables

There is just something about a steak and potatoes dinner that is comforting. It’s so simple yet such a classic dinner that when done the right way, can be exquisite. I seasoned my steak with a simple salt and pepper rub but the green peppercorn sauce is what made it out of this world. Flambaying (is that even a word) a dish for the first time was absolutely terrifying, but also totally exhilarating. I felt like a total pro afterwards. 

Anyone who knows me, knows that potatoes are my favorite food. I love potatoes when they’re baked, mashed, roasted, or even turned into french fries. Roasted with fresh garlic and rosemary, these potatoes were to die for and completed my dish alongside the grilled fresh squash and zucchini. 

Chicken Parmesan with Angel Hair

Chicken is by far my favorite type of protein. I can eat chicken in any way, shape, or form. Add in some marina sauce and mozzarella cheese and you can’t go wrong. 

Chicken Parmesan is one of those dishes that is super easy to make but can really impress someone. The best part about this dish was the homemade marinara sauce and mixing in all my favorite herbs and spices to bread my chicken. This is definitely another recipe that will be added to my date night roster. 

Gourmet Breakfast Buffet

This week in cooking class was a free week, every person in class made different parts of a classic breakfast, and it was heavenly

We had eggs benedict, chocolate chip pancakes, belgian waffles with homemade whipped cream, breakfast potatoes, biscuits with sausage gravy, corned beef hash, pepper crusted bacon, turkey sausage, vegetable frittata, cinnamon sugar doughnut holes, and muffins. The best part about this day was that everything was made entirely from scratch so it all tasted that much better.
